Lodge Manager

Keith Wolfe is the resort manager here at Woodfield Manor.  He brings to this position years of experience in customer service, and takes pride in his ability to quickly establish strong interpersonal relationships with his guests. 

One advantage of staying at Woodfield Manor is that a typical visitor is here for a weeks duration.  This gives the management team an opportunity  to get to know each and every resident on a more personal basis, the result is a more fulfilling  experience for Woodfield Manor's vacationers.

Juan De Leon
Executive Chef

Juan De Leon comes to Woodfield Manor Chophouse from New York City. At an early age he discovered his love for food and cooking. By age eleven, under his Mothers watchful eyes, he was cooking for his family. After moving to the Pocono Mountains, he began his culinary training as a banquet cook and later Sous Chef at Split Rock Lodge. Eventually he became the Executive Chef at Elmhurst Country Club and Robert Christians.


Since the opening of the Chophouse, Juan has progressed from Sous Chef to sharing the Executive Chef responsibilities. His continued love for food, and a innovative approach to menu design makes him a favorite with the guests at Woodfield Manor Chophouse.

Joanne Wolfe
On Site Management Team

Joanne Wolfe is the other half of the husband-wife on site management team.   She brings to this position a background of 30 years working in the health care field.

Joanne is also a self-described multi-media artist and poet who nurtures her
relationship with natural landscapes allowing her "own point of view" to come through her art and writing. She hopes to draw from her interests of travel, gardening,art history and mythology to create a very unique experience for her guests at Woodfield Manor.

Bradley Kreider
Executive Chef

Bradley Kreider graduated from Case Western University with a B.S. in Management. After finding a 40 hour per week desk job unfulfilling, he leapt into the culinary world because of its fast pace and artistic creativity. Before finding Woodfield Manor Chophouse, Bradley studied under great chefs at Sycamore Grill and Stroudsmoor.


Good food coupled with a memorable social experience is Bradley’s focus. “Our food is serious, but we also want people to have a good time with it”, says Brad. He loves to adapt world cuisines to contemporary American cooking. As a member of the James Beard Foundation he attends culinary events at its West Virginia head-quarters.

Owner

Tina Dowd has many passions and projects. She is a successful entrepreneur with a B.S. degree from Kutztown University.

Her talent for assembling successful teams, her passion for travel and fine dining, her tenacity for getting the job done, and her vision for building success stories come together in a perfect storm for Woodfield Manor

Bob Gibson
Restaurant Manager

Bob joined the Woodfield Manor Chophouse staff as Restaurant Manager in Sept 2008. Bringing a lifetime of restaurant experience, Bob has made great strides in making the Chophouse the fine dining venue the Pocono Mountains has been raving about since our opening in March of 2008.

Having grown up in the hospitality business, from dishwasher / busser in his parent’s restaurant, to eventual Restaurant Manager, Mr. Gibson has a feel for the entire scope of what fine dining should be. Bob and his wife Judy for years ran their own restaurant in the Stroudsburg Pa. area. That background has further advanced the contribution Bob brings to the Chophouse.
